This time, I’m introducing a carrot cake that’s perfect for those who want to enjoy vegetables in a delicious way! There are four key points: ① It uses a generous 400g of carrots, ② The carrots are quickly cooked in the microwave for a time-saving method, ③ Four whole eggs are used for a fluffy texture, and ④ A mix of whole wheat flour and all-purpose flour enhances flavor while also providing fiber! Adding carrots not only gives the cake a rich flavor but also provides antioxidant vitamin A (beta-carotene). It’s a healthy yet satisfying cake. While it looks like a regular cake, the inside is packed with vegetables. This recipe was made with kids in mind, especially those who aren’t fond of veggies.

材料・・・Ingredients
- 人参・・・皮を剥いた状態で400g
- Whole Wheet Flour ・・・100g
- All Purpose Flour・・・150g
- ベーキングパウダー・・・小1
- 砂糖・・・200g
- 卵・・・4個(全卵)
Ingredients
- Carrots (peeled) … 400g
- Whole Wheat Flour … 100g
- All-Purpose Flour … 150g
- Baking Powder … 1 teaspoon
- granulated sugar … 200g
- Eggs (whole) … 4
- butter…200g
作り方・・・How to Cook
①人参の皮を剥き、乱切りにします。これを耐熱皿の上に置き、少量の水をかけてレンジで加熱します。(1000wなら3分を2回程度で竹串でス―っと入る程度まで加熱します。)チョッパーに入れ、細かくします。

➁別のボールにバター(指の跡が残る程度の硬さ)を入れて混ぜる。砂糖を2~3回に分けて加えます。
③➁に卵を3回程度に分けて加え混ぜます。
④別のボールにWhole Wheat Flour、All-Purpose Flour 、Baking Powderを入れ泡だて器でくるくると30回程度混ぜます。
⑤③のボールに④を加え、ゴムベラで混ぜます。
⑥型にオーブンシートを敷き、⑤を流し入れます。
⑦170度で65分焼きます。(下段)

⑦ In another bowl, whip the heavy cream and granulated sugar until soft peaks form (about 70% stiff).
① Peel the carrots and cut them into chunks. Place them on a microwave-safe dish, sprinkle with a small amount of water, and microwave until tender (about 3 minutes × 2 times at 1000W, or until a skewer goes through easily). Transfer to a chopper and finely process.
② In a separate bowl, add butter (softened to the point where a finger leaves a dent) and mix. Add granulated sugar in 2 to 3 additions, mixing each time.
③ Gradually add the eggs to the butter-sugar mixture in 3 portions, mixing well after each addition.
④ In another bowl, combine the Whole Wheat Flour, All-Purpose Flour, and Baking Powder. Use a whisk to mix in a circular motion about 30 times.
⑤ Add the flour mixture (from step ④) into the wet mixture (from step ③), and fold gently with a rubber spatula.
⑥ Line a baking pan with parchment paper and pour the batter into the pan.
⑦ Bake at 170°C (338°F) for 65 minutes on the lower rack.
